It's traditional in much of the south, to eat black-eyed peas on New Year's. I'm not a huge fan of black-eyed peas BUT, I adore these two recipes!

Black-Eyed Pea Salad

Amount Measure Ingredient -- Preparation Method

1 clove Garlic
1/4 medium Onion
1 teaspoon Creole (or coarse grained -- mustard)
1/4 cup Balsamic vinegar
1 1/2 cups Extra virgin olive oil
1/2 teaspoon Kosher salt
Fresh ground black pepper TT
3 cans Black-eyed peas -- 14 oz. cans
1 large Sweet onion -- cut in half
and sliced thin
1 Red bell pepper -- diced
1 Green pepper -- diced
4 Roma tomatoes -- diced
1 Rib celery -- diced
1 Jalapeno chile -- seeded and
minced

Put garlic, onion and mustard into food processor or blender and pulse 5-6 times. Add vinegar and process until onion bits are finely choped. With procosseor running, add oil a few drops at a time and then pour in steady stream. Process until dresing is emulsified. Mix in S & P. Set aside. Heat beans gently until steaming. Remove from heat and drain. Pour warm beans into bowl; add dressing and gently mix.
Refrigerate until cool. Toss in onion, bell peppers, tomatoes, ceery and jalapeno. Serve cold or at room temp. Prepare no more than 3 days ahead. Makes 8 - 10 servings. Per serving: 433 calories. 37 g. fat. NO cholestrol. 535 mg. sodium. Source: S.A. Express News 12/26/96.

NOTES: I made this 12/31/06. I cut this recipe down to 6 serrvings. I'm not crazy about black-eyed peas but this recipe is great. I'd make this one anytime of year and love it. F.J.

Pasta Hoppin' John - New Year's 2008

Amount Measure Ingredient -- Preparation Method

1 pound Bow Ties -- uncooked
1 tablespoon vegetable oil
1 medium onion -- chopped
1 jalapeño pepper -- seeded and chopped
3 cloves garlic -- chopped
1 28-ounce can crushed tomatoes
1 16-ounce can black-eyed peas -- rinsed and drained
1 tablespoon cider vinegar
3 tablespoons chopped fresh cilantro -- optional
Salt and black pepper -- to taste

Cook pasta according to package directions; drain. In large sauté pan, heat oil over medium heat. Sauté the onion, jalapeño, and garlic until softened, about three minutes. Add tomatoes. Simmer 10 minutes partially covered. Stir occasionally. Add the black-eyed peas, vinegar and cilantro. Cover and simmer an additional 10 minutes. Season with salt and black pepper. Toss gently with cooked pasta and serve immediately.

Serves 6-8

I made this 1/1/08. We had it warm and it was great; I kept eating it cold for two more days a still loved it!!
